Both the tomato and cucumber salad are my mother-in-laws go-to's for just about every dinner, and they're my favourite! They're perfect for an easy meal at home, or as a side when hosting a dinner party, but the best part about both salads is that my toddler will eat them too #WINNING!

Tomato Salad

Tomato Salad

Course: Side

Ingredients

- 6+ Romano tomatoes
- 3-4 fresh basil leaves, rolled and roughly chopped
- 1/4 - 1/2 red onion, thinly sliced
- 4 tbsp extra virgin olive oil (enough to coat the tomatoes)
- 2 generous pinches of sea salt
- Fresh hot peppers, to taste (optional)

Instructions

  1. Chop tomatoes and put them into a bowl
  2. Add olive oil and salt to bowl, mix well
  3. Chop the basil roughly and mix into the salad
  4. Slice onions and add them into the bowl
  5. Add hot peppers to taste (optional)

Cucumber Salad

Cucumber Salad

Course: Side

Ingredients

- 1 large English cucumber, peeled and cut into slices
- 4 tbsp extra virgin olive oil (enough to coat the cucumbers)
- 1 teaspoon of garlic powder
- 2 tablespoons of white balsamic vinegar
- 2 generous pinches of sea salt
- Pinch of dried oregano

Instructions

  1. Slice cucumbers and put them into a bowl
  2. Add salt, garlic powder, dried oregano, and white balsamic vinegar
  3. Mix, and let sit for a few minutes before serving
