This next recipe from the newlywed cookbook series is my aunt and uncle's famous simple pancake recipe. I grew up in a pretty traditional Eastern European household, so pancakes weren't something we typically had for breakfast [eggs, veggies and cold cuts were more our style]. I actually don't think I tried pancakes until I started grade school; I had no idea what I was missing out on!
This recipe is easy, and delicious, with simple ingredients. Perfect for Sunday morning breakfast with the family. It's also picky toddler approved!
- 3 eggs
- 2 cups of buttermilk or yogurt [I used the new plain Danone yogurt as a healthier alternative)
- 1 1/2 cup of all-purpose flour
- 1 teaspoon of baking soda
- 1/4 cup of melted butter
- 1 tablespoon of brown sugar
- Maple syrup [optional]
- Berries [optional]
1. Beat eggs with buttermilk or Danone plain yogurt
2. In a separate bowl, combine flour with baking soda and brown sugar
3. Combine dry and wet ingredients; blend together slowly
4. Stir in melted butter
5. Spoon onto frying pan
6. Once bubbles appear, flip and fry until golden
7. Serve with maple syrup and/ or berries
I topped my pancakes with a spoonful of Danone plain yogurt as an added touch, along with blueberries and maple syrup!
