It's Family Day long weekend, and what better way to spend time with family than indulging in a home cooked meal. From what I hear, Shepard's Pie is a family favourite for many, however the first time I actually tried it was when I made this recipe! Verdict: It's SO good, and easy to make . I can't believe I've been missing out all this time!!

SHEPHERD'S PIE

Ingredients

- 1 1/2 to 2 lbs of potatoes, peeled and quartered
- 8 tablespoons of butter
- 1 medium onion, chopped
- 1-2 cups of vegetables
- 1 1/2 lbs organic grass-fed ground beef
- 1/2 cup of beef broth
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- Parmesan cheese to taste

Instructions

  1. Preheat oven to 350F
  2. Place peeled and quartered potatoes in a medium sized pot, cover with an inch of cold water, and add teaspoon of salt
  3. Bring potatoes to a boil, reduce to simmer, and cook until tender
  4. While potatoes are boiling, melt 4 tablespoons of butter in a large pan on medium heat. Add onions and carrots, followed by asparagus, peas and corn
  5. In a separate pan, add butter and ground beef, and cook until no longer pink
  6. Add beef to vegetable pan
  7. Add Worcestershire sauce, beef broth, salt and pepper to the beef and vegetable mixture
  8. Bring mixture to a simmer, reduce heat to low, and cook uncovered for 10 minutes. Add more beef broth if necessary to keep the beef from drying out
  9. When potatoes are ready, remove them from the pot, and place them in a bowl with remaining 4 tablespoons of butter, as well as salt and pepper. Mash with a fork or potato masher
  10. Grease an oven safe pan, and add the beef and veggie mixture to the bottom of the pan
  11. Cover the mixture with mashed potatoes
  12. Cover the pan and bake for 20 minutes
  13. Remove cover from the pan, switch to broil, and broil until top is slightly browned
  14. Remove from oven, serve hot, and dig in!
